Rusty Mashed Tators

OH mylanta! I went to cook dinner...and I really didn't feel like it. Looked around to see what I had and BAM...the bomb diggity of all mashed potatoes recipes were born. RIGHT THERE...in MY kitchen!


Are you ready for this?! Preheat your oven at 350...You will need:

  • 4 large russet potatoes (peeled/washed)
  • 1/2 jar of bacon bits
  • 1/2-1 cup of cheddar grated
  • 1 large clove of garlic
  • 2 Tbsp butter
  • 1/4 cup sour cream
  • 2 oz cream cheese
  • milk
  • salt
  • pepper
First off prep your potatoes by cutting and boiling till soft. You should easily be able to stick a fork inside. When you are finished boiling your potatoes, dump the water out and use a masher inside the pot dropping the butter into melt.

In a separate bowl you will put the sour cream, cream cheese 1/4 of the jar of bacon bits, 1 large clove of garlic (minced...pressed...you get it!) and then dump your potatoes inside and start mixing together! You will add milk as you are whipping your potatoes and salt/pepper to taste. When that is to the correct "mashed tator" consistency you are going to mix in 1/4 of your cheese mixture!

 
Place your tators in a casserole dish and dump the remaining cheese over top and 1/4 of the container of bacon bits. Place in your oven at 350 for 20 minutes and VOILA...the tastiest tators you ever did try! Even the baby loved them!!
