Cooking with the Littles - Rainbow Cupcakes

Being raised in the country the one thing I absolutely love to do is cook! I love to have my kids in the mess and mixing things up! Emily Grace started at 18 months:

Its so fun to look back at those chubby little legs and arms! As this next step by step tutorial on how to make rainbow cupcakes she is the ripe ol' age of 4! We found this recipe last year in Family Fun magazine...which I might ad is seriously one of the best magazines we get! Here goes:

You will need: 1 white cake box mix, 3 large eggs (whites only), 1 1/3 cups water & 2 Tbsp. oil

Separate your eggs whites! This was always my favorite thing to do as a kid!


Watch out...there just might be a yolk in hand...ha ha ha (my pathetic attempt at a kid joke!)

Pre-heat oven to 350

Mix all ingredients together.

This is a kid that knows what she is doing!

Now this was her first time using the hand mixer! She did a great job!

Blend for 2 minutes using the hand mixer.

This is the best part!

Separate batter into 6 bowls.

We used green, blue, red, yellow, purple and orange for food coloring! You can make your rainbow anyway you like!

We took one bowl at a time layering them into the cupcake liners. We started with Green, blue, purple, yellow, orange and last was red on top.

Bake in oven for 21 minutes.

I had to check to be sure they weren't over flowin'!

We sure had fun eating making them! From our kitchen to yours...we hope your counters are covered in batter and faces in flour. That's how you know you had some REAL fun!
