Hey good lookin' watcha got cookin' - Blackberry Muffins

One thing I love about living in my town is we have a plethora of farms where you can go and pick various types of berries! I on the other hand live across from large blackberry bushes so the kids and I ventured out and picked a bowl full of berries! I made a batch of blackberry freezer jam and had just enough berries left that I wanted something...different! SO I decided to make up a muffin recipe! You know what? It turned out fabulous! Here it is:

Preheat oven 400

In a medium sized bowl combine in order: 2 eggs (beaten), 1 1/2 cups milk (I used lactose free cause of my daughter!), 1/2 cup oil. Mix well and then add in...

2/3 cup sugar, 4 tsp baking soda, 1/2 tsp salt, 1/2 tsp cinnamon and then 3 1/2 cups of flour. I am a one bowl kinda cook! I hate to dirty more dishes than needed! Cause guess who has to wash them!

As an after thought {so glad I thought of it!} I added 1 tsp of vanilla to sweeten it up a bit!

Fold in 1 1/2 cups of blackberries gently crushing some and leaving a few whole!

This is mine fully combined!

I didn't want to mess with paper liners so I sprayed my pans with oil. I then divided the batter up between the 2 pans. It made 21 muffins.

Bake 20 minutes or just till lightly brown! Oh Em Gee...they were delish! My kids scarfed them down and ate all their cooked carrots at dinner JUST so they could get one! (behind it you can see my freezer jam setting in the containers!) I hope you love them! Enjoy!
